Stay Fresh with the Greek Salsa Recipe
It’s time to think about salsa beyond the confines of a tortilla chip dip or a taco topping. Don’t get me wrong – dipping chips is salsa fresca is one of my favorite pass times. But, when you expand your salsa horizons you’ll be amazed by the amazing flavor combinations you can explore.
What is Mediterranean Salsa?
Whether you call it Greek salsa, Greek relish or Mediterranean salsa, we can all agree that this fresh condiment is bursting with flavor.
Like it’s Mexican counterpart, the foundation of Mediterranean salsa (or at least my version of it) is tomatoes. I like to use grape tomatoes for their small statute, sweet disposition and satisfying firmness.
Then I add diced English cucumber, diced red onion, chopped kalamata olives and baby kosher dill pickles. All this fresh, crunchy deliciousness is then marinated in a bath of extra virgin olive oil, red wine vinegar, fresh lemon juice & salt and pepper. Does it get any more Mediterranean than that?
How to Eat Mediterranean Salsa
Frankly, I could just eat it with a spoon, but this Greek salsa recipe has many applications.
My favorite, of course, is to pile it on top of some fresh homemade hummus and then sprinkle on some smoked paprika and toasted pine nuts. Naturally, it’s also a great side to some homemade falafel as well.
If you’re looking to make an easy plant-based lunch or simple dinner, Mediterranean salsa is also fantastic tossed in a little leftover pasta. Consider adding a spoonful of hummus to it as well for some extra deliciousness. I also like it over a hearty, nutty grain, like farro.

Mediterranean Salsa
Ingredients
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 2 tbsp fresh lemon juice about 1/2 lemon
- salt & pepper to taste
- 1 pint grape tomatoes diced
- 1 English cucumber diced
- 1/4 red onion diced
- 4 oz kalamata olives pitted & roughly chopped
- 8-10 baby kosher dill pickles chopped
Instructions
- Combine all ingredients in a large mason jar and shake. Allow to marinate for at least 1 hour, then serve.
