My Small Batch Granola Recipe is a great way to get some whole grains on the table first thing in the morning. And I LOVE smearing white beans on an everything bagel and topping it with avocado slices, fresh arugula, pickled red onions and toasted pumpkin seeds. I’ve got everything you need to make that here in my Vegan Bagel Sandwich recipe.
As for dinner? Well, there is a lot to choose from, but you can’t go wrong with my Vegan Baked Pasta!

As the weather gets cold, a savory bowl of my Vegan Vegetable Stew is just what I need to stay healthy and warm! As spring arrives and fresh herbs become more readily available, I keep a constant jar of Vegan Basil Pesto in the refrigerator.
And, as for late summer, well… fresh peaches rule the day. I add them to salads and pizzas and eat them when I am out on the trails. And the leftovers? They make a great Peach Chia Jam!

It’s no secret that I like to mix things up! One night we’ll be slurping that spicy Thai Red Curry Ramen Noodle Bowls, only to find ourselves having lunch in the Mediterranean Buddha Bowls the next day.
