  • Vegan Sushi. When I transitioned to a plant-based diet, the idea of giving up sushi was a hard one. But, vegan sushi is a force to be reckoned with. Keep vegan sushi colorful with strawberry and avocados, punctuated with the flavor of fresh basil. Or, warm it up with roasted sweet potato and asparagus vegan sushi with hints of fresh mint.
  • Miso Soup. Think that this one is a given? It’s not. Miso soup is often made using fermented bonito (skipjack tuna fish shavings), putting it squarely in a non-vegan category. Something to look out for when you order it out. But if you make it at home just using miso paste, you’ve got a vegan-friendly, comforting vegan appetizer in your hands.
  • Soba Noodles. “Soba” is the Japanese word for “buckwheat” which is the flour used to create the noodled used in a variety of hot and cold Japanese dishes. Topping these with fresh veggies and an Asian vinaigrette is a win in both the vegan and gluten-free categories. Or, get extra special by topping them with miso-glazed mushroom scallops with steamed asparagus, like I did here.
