But you can achieve mouth-watering vegan Italian dishes with a little patience and creativity.

  • Vegan Lasagna.  Gone are the days of the post-lasagna food hangover. In our Italian vegan food recipes category, we offer up lighter, plant-based lasagna preparation alternatives.  Instead of thick seminola wheat noodles that take forever to digest, line your lasagna with thin layers of zucchini and/or eggplant. Swap out gooey mozzarella for a cashew cream sauce and ground beef with good-for-you red lentils.
  • Vegan Pasta.  Instead of loading up your plate (and your gut) with meat sauce, try a lentil bolognese. Or a creamy cashew alfredo. I’ve searched this dish to dinner guests (first, of course, identifying any food allergies) and they’ve not been able to tell the difference. And don’t forget to load up your vegan pasta dish with tons of vegetables – they add flavor, texture and additional nutritional benefits. Then top the whole thing off with a nut-based vegan parmesan cheese. Yup! That’s a thing!  And done right, it will make your vegan pasta dishes sing with flavor.
  • Vegan Soup. Don’t forget warm & comforting dishes like vegan minestrone. It’s a quick & easy vegan recipe that offers up a light vegan lunch or vegan dinner – perfect when the weather starts to change in the fall.
