Breakfast is one of my favorite meals, but it’s often a meal that falls by the wayside. I mean well, but between getting the kids out the door for school and myself ready for the workday, it’s easy to grab a few toast crusts and wash it down with tea. To set myself up for success, I’ve developed a variety of vegan breakfast recipes: those that are perfect for the grab-and-go (like an easy, healthy vegan jam or my small batch granola recipe) and those that fit well for a lazy Sunday brunch.
